Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. Sift the Dry Ingredients:

  • In a large bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.

3. Prepare the Wet Ingredients:

  • In another large bowl, beat together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.

4. Combine Wet and Dry Ingredients:

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

5. Add Carrots, Pineapple, and Nuts:

  • Gently fold in the grated carrots, crushed pineapple, and chopped nuts (if using).

6. Divide and Bake:

  • Divide the batter evenly between the prepared cake pans.
  • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

7. Cool and Frost:

  • Allow the cakes to cool in the pans for about 10 minutes, then remove them from the pans and place them on a wire rack to cool completely.
  • While the cakes are cooling, prepare the cream cheese frosting.

For the Cream Cheese Frosting:

1. Beat Cream Cheese and Butter:

  • In a medium-sized bowl, beat the softened cream cheese and butter until creamy and smooth.

2. Add Sugar and Vanilla:

  • Gradually add the powdered sugar and vanilla extract, and continue to beat until the frosting is fluffy and well combined.

Assembly:

1. Frost the Cake:

  • Once the cakes are completely cooled, spread a layer of cream cheese frosting on top of one of the cakes.
  • Place the second cake on top and frost the top and sides of the entire cake with the remaining frosting.

2. Decorate (Optional):

  • Decorate with additional chopped nuts, grated carrots, or a dusting of cinnamon if desired.

3. Slice and Enjoy:

  • Slice your delicious homemade carrot cake and enjoy!

Note: This carrot cake is best stored in the refrigerator due to the cream cheese frosting. Simply cover it with plastic wrap or store it in an airtight container to keep it fresh. Enjoy your moist and flavorful carrot cake!
