Carrot Cake with Chocolate Coating

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 9-inch round cake pans.
  2. In a medium-sized bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set this dry ingredient mixture aside.
  3. In a large mixing bowl, combine the granulated sugar and brown sugar. Add the eggs and mix until well combined.
  4. Stir in the vegetable oil, applesauce, and vanilla extract. Mix until the wet ingredients are thoroughly incorporated.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix; you want a smooth batter.
  6. Gently fold in the grated carrots, ensuring they are evenly distributed throughout the batter.
  7. Pour the carrot cake batter into the prepared baking pan(s). Smooth the top with a spatula.
  8. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean. If using two round cake pans, the baking time may be slightly shorter, so start checking around 30 minutes.
  9. Once baked, remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then, transfer the cake to a wire rack to cool completely.
  10. While the cake is cooling, prepare the chocolate coating. In a heatproof bowl, combine the chopped semisweet chocolate, heavy cream, and vanilla extract. Place the bowl over a saucepan of simmering water (double boiler) and stir until the chocolate is completely melted and the mixture is smooth. Alternatively, you can microwave in 20-second intervals, stirring in between until fully melted.
  11. Once the cake has cooled, pour the chocolate coating over the top. Use a spatula to spread it evenly, allowing some to drip down the sides for a rustic look.
  12. If desired, garnish with chopped walnuts, grated carrots, or shredded coconut while the chocolate is still soft.
