Instructions:
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottoms of the pans with parchment paper for easy removal.
- In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. This will ensure your cake batter is free of lumps and well-mixed.
- In a separate bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; you want the batter to be smooth, but overmixing can lead to a dense cake.
- Gradually add the boiling water to the batter, stirring in small increments. The batter will become thin, but this is normal. It will make your cake incredibly moist.
- Divide the batter evenly between the prepared cake pans.
- Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center of the cakes comes out clean.
- Allow the cakes to cool in the pans for about 10 minutes, then remove them from the pans and transfer to a wire rack to cool completely.
- If you’d like to add a chocolate ganache, heat the heavy cream until it’s just about to boil, then pour it over the chocolate chips in a heatproof bowl. Stir until the chocolate is fully melted and the ganache is smooth. Allow it to cool slightly.
- Once the cakes have cooled, place one of the cakes on a serving plate, and spread a layer of ganache (if using) on top. Place the second cake on top and cover the top and sides of the entire cake with the remaining ganache.
- Decorate with chocolate shavings, sprinkles, or your favorite toppings.
