Instructions:

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottoms of the pans with parchment paper for easy removal.
  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. This will ensure your cake batter is free of lumps and well-mixed.
  3. In a separate bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; you want the batter to be smooth, but overmixing can lead to a dense cake.
  5. Gradually add the boiling water to the batter, stirring in small increments. The batter will become thin, but this is normal. It will make your cake incredibly moist.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  8. Allow the cakes to cool in the pans for about 10 minutes, then remove them from the pans and transfer to a wire rack to cool completely.
  9. If you’d like to add a chocolate ganache, heat the heavy cream until it’s just about to boil, then pour it over the chocolate chips in a heatproof bowl. Stir until the chocolate is fully melted and the ganache is smooth. Allow it to cool slightly.
  10. Once the cakes have cooled, place one of the cakes on a serving plate, and spread a layer of ganache (if using) on top. Place the second cake on top and cover the top and sides of the entire cake with the remaining ganache.
  11. Decorate with chocolate shavings, sprinkles, or your favorite toppings.
  12. Slice and enjoy your delicious, moist chocolate cake!
