Ingredients

For the Stuffed Peppers:

  • 6 large bell peppers (red, yellow, or green)
  • 8 ounces (226g) cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup finely chopped green onions
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

For Topping:

  • 1/2 cup panko bread crumbs
  • 2 tablespoons melted butter
  • 1/4 cup grated parmesan cheese

Instructions

1. Preheat the Oven

  • Preheat your oven to 375°F (190°C).

2. Prepare the Peppers

  • Cut the tops off the bell peppers and remove the seeds and membranes. Rinse them under cold water and set aside. The tops can be reserved for garnish.

3. Prepare the Cream Cheese Filling

  • In a mixing bowl, combine the softened cream cheese, cheddar cheese, green onions, minced garlic, chopped cilantro, paprika, salt, and pepper. Mix until well combined.

4. Stuff the Peppers

  • Carefully fill each hollowed-out bell pepper with the cream cheese mixture. Ensure they are filled evenly but not overly packed.

5. Prepare the Topping

  • In a separate bowl, combine the panko bread crumbs, melted butter, and grated parmesan cheese. Mix until the breadcrumbs are evenly coated with butter and cheese.

6. Top the Stuffed Peppers

  • Gently press the breadcrumb mixture onto the cream cheese filling in each pepper. This will create a delicious, crispy topping.

7. Bake

  • Place the stuffed peppers in a baking dish and put the reserved pepper tops back on if desired for presentation. Cover the dish with aluminum foil.

8. Bake Again

  • Bake in the preheated oven for 25-30 minutes with the foil on. Then, remove the foil and bake for an additional 10-15 minutes or until the peppers are tender, and the topping is golden brown.

9. Serve

  • Once the cream cheese stuffed peppers are done baking, remove them from the oven and let them cool slightly. Serve them warm as a delightful appetizer or side dish.

Enjoy your Cream Cheese Stuffed Peppers with their creamy, cheesy goodness and a delightful crunch on top. These are sure to be a hit at your next gathering or as a delicious snack for any occasion!
