Muffins That Taste Like Doughnuts Recipe

Yield: 12 muffins

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 2/3 cup whole milk
  • 2 large eggs
  • 1 teaspoon pure vanilla extract

For the Cinnamon-Sugar Coating:

  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, nutmeg, and cinnamon until well combined.
  3. In a separate microwave-safe bowl, melt the 1/2 cup of unsalted butter. Allow it to cool slightly.
  4. In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract until well combined.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  6. Using an ice cream scoop or a spoon, fill each muffin cup about 2/3 full with the batter.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  8. While the muffins are baking, prepare the cinnamon-sugar coating. In a small bowl, combine the 1/2 cup of granulated sugar and 1 teaspoon of ground cinnamon.
  9. Once the muffins are done, allow them to cool for a few minutes in the muffin tin, then transfer them to a wire rack.
  10. While the muffins are still warm, dip the top of each muffin into the melted 1/4 cup of unsalted butter, then roll it in the cinnamon-sugar mixture until it’s well coated.
  11. Place the coated muffins back on the wire rack to cool completely.
