Muffins That Taste Like Doughnuts Recipe

Yield: 12 muffins
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 2/3 cup whole milk
- 2 large eggs
- 1 teaspoon pure vanilla extract
For the Cinnamon-Sugar Coating:
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 cup unsalted butter, melted
Instructions:
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, nutmeg, and cinnamon until well combined.
- In a separate microwave-safe bowl, melt the 1/2 cup of unsalted butter. Allow it to cool slightly.
- In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are perfectly fine.
- Using an ice cream scoop or a spoon, fill each muffin cup about 2/3 full with the batter.
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- While the muffins are baking, prepare the cinnamon-sugar coating. In a small bowl, combine the 1/2 cup of granulated sugar and 1 teaspoon of ground cinnamon.
- Once the muffins are done, allow them to cool for a few minutes in the muffin tin, then transfer them to a wire rack.
- While the muffins are still warm, dip the top of each muffin into the melted 1/4 cup of unsalted butter, then roll it in the cinnamon-sugar mixture until it’s well coated.
- Place the coated muffins back on the wire rack to cool completely.
