For Serving:

  • 6-8 flour tortillas

Instructions:

1. Marinate the Steak:

  • In a bowl, combine the olive oil, minced garlic, cumin, chili powder, smoked paprika, oregano, salt, black pepper, and lime juice.
  • Place the thinly sliced flank steak in a resealable plastic bag or a shallow dish.
  • Pour the marinade over the steak, ensuring it’s well-coated.
  • Seal the bag or cover the dish with plastic wrap and refrigerate for at least 30 minutes. For best results, marinate for 2-4 hours or overnight.

2. Prepare the Fajita Filling:

  • Heat a large skillet or a cast-iron pan over medium-high heat.

  • Transfer the cooked peppers and onions to a plate and keep them warm.

3. Cook the Steak:

  • In the same skillet, add the marinated steak along with the marinade.
  • Cook for 2-4 minutes on each side for medium-rare, or to your preferred level of doneness.
  • Remove the steak from the skillet and let it rest for a few minutes before slicing it thinly against the grain.

4. Assemble the Steak Fajitas:

  • Warm the flour tortillas in a dry skillet or microwave for a few seconds.
  • Place a few slices of the cooked steak on a tortilla.
  • Top with the sautéed peppers and onions.
  • Add your choice of salsa, sour cream, guacamole, shredded cheese, and chopped cilantro.
  • Squeeze fresh lime juice over the top for extra flavor.

5. Serve and Enjoy:
