TRIPLE CHOCOLATE CAKE

Ingredients:
- 1 3/4 cups all-purpose flour
- 1 3/4 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons pure vanilla extract
- 1 cup boiling water
- 1 cup semisweet chocolate chips
- 1/2 cup white chocolate chips
- 1/2 cup dark chocolate chips
For the Chocolate Ganache:
- 1 cup heavy cream
- 1 1/2 cups semisweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Make sure they are well combined.
- In a separate bowl, whisk the eggs and add the milk, vegetable oil, and vanilla extract. Mix until well combined.
- Pour the wet ingredients into the dry ingredients and stir until the batter is smooth and no lumps remain.
- Stir in the semisweet chocolate chips, white chocolate chips, and dark chocolate chips. The batter should be rich and chocolatey.
- Now, carefully add the boiling water to the batter and mix until smooth. The batter will be thin, but that’s normal.
- Divide the batter evenly between the prepared cake pans.
- Bake in the preheated oven for 30 to 35 minutes or until a toothpick inserted into the center of the cakes comes out clean.
- Allow the cakes to cool in the pans for about 10 minutes, then remove them from the pans and place them on a wire rack to cool completely.
For the Chocolate Ganache:
- In a saucepan, heat the heavy cream over medium heat until it’s just about to boil. Remove it from the heat.
- Place the semisweet chocolate chips in a heatproof bowl. Pour the hot cream over the chocolate chips.
- Let it sit for a minute, then stir until the chocolate is completely melted and the mixture is smooth and glossy.
Assembly:
- Place one of the cooled chocolate cake layers on a serving plate.
- Pour a generous amount of the chocolate ganache over the top of the cake layer and let it drip down the sides.
- Carefully place the second cake layer on top and pour more ganache over it, letting it cascade down the sides.
- Use a spatula to spread the ganache evenly over the top of the cake and smooth it around the sides.
- If desired, decorate the cake with additional chocolate chips, chocolate shavings, or other chocolate decorations.
- Let the cake sit for a while to allow the ganache to set.
