Ingredients:
- 4 turkey wings
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 celery stalks, finely chopped
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 cup chicken broth
- 1 (14.5-ounce) can diced tomatoes
- 2 teaspoons paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper, to taste
- 2 bay leaves
- 2 tablespoons all-purpose flour
- 2 tablespoons water
- Chopped fresh parsley, for garnish
Instructions:
- Prepare the Turkey Wings:
- Rinse the turkey wings under cold water and pat them dry with paper towels.
- Season the turkey wings with salt, black pepper, and 1 teaspoon of paprika.
- Sear the Turkey Wings:
- In a large, heavy-bottomed skillet or Dutch oven, heat the vegetable oil over medium-high heat.
- Add the turkey wings and sear them on all sides until they are browned, about 5 minutes per side.
- Remove the turkey wings from the skillet and set them aside.
- Prepare the Smothering Sauce:
- In the same skillet, add the chopped onion, celery, and bell peppers. Sauté for 5-7 minutes until they become tender.
- Add the minced garlic and sauté for an additional 1 minute.
- Sprinkle in the remaining paprika, dried thyme, dried oregano, and cayenne pepper. Stir well to combine the spices with the vegetables.
- Pour in the chicken broth and diced tomatoes with their juice. Add the bay leaves.
- Return the seared turkey wings to the skillet and bring the mixture to a simmer.
- Simmer and Smother:
- Cover the skillet with a lid and reduce the heat to low. Allow the turkey wings to simmer in the sauce for about 1.5 to 2 hours, or until they are tender and cooked through. Stir occasionally.
- Thicken the Sauce:
- In a small bowl, mix the all-purpose flour and water to create a smooth paste.
- Stir this paste into the simmering sauce and allow it to thicken. Simmer for an additional 5-10 minutes.
- Serve:
- Remove the bay leaves and discard them.
- Serve the smothered turkey wings hot over a bed of cooked rice or with your favorite side dishes.
- Garnish with chopped fresh parsley before serving.
