Beef Taco Casserole

Ingredients:
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning mix
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 1 cup salsa
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup chopped fresh cilantro (optional)
- 10 taco shells, crushed
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Cook the Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add Aromatics: Add chopped onions and minced garlic to the skillet. Sauté until the onions are soft and translucent.
- Season the Beef: Sprinkle the taco seasoning over the beef mixture. Stir well to combine, ensuring that the meat is evenly coated.
- Combine Ingredients: In a large mixing bowl, combine the seasoned beef mixture, black beans, corn, diced tomatoes with green chilies, and salsa. Mix thoroughly.
- Layer in Casserole Dish: Spread half of the crushed taco shells in the bottom of a greased 9×13-inch casserole dish. Top with half of the beef mixture and half of the shredded cheddar cheese. Repeat the layers, finishing with a layer of cheese on top.
- Bake: Place the casserole dish in the preheated oven and bake for 25-30 minutes or until the cheese is melted and bubbly.
- Serve: Remove the casserole from the oven and let it cool for a few minutes. Garnish with dollops of sour cream and chopped cilantro if desired.
