Ingredients:

  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional for some heat)
  • 1 can (15 oz) tomato sauce
  • 1 can (14 oz) diced tomatoes, undrained
  • 2 cups beef broth
  • 2 cups uncooked elbow macaroni
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

1. Brown the Beef:

  • In a large skillet or Dutch oven, brown the ground beef over medium-high heat. Break it up with a spatula and cook until it’s no longer pink.

2. Add Aromatics:

  • Add the chopped onion and minced garlic to the skillet with the beef. Cook for 2-3 minutes until the onion is translucent and the garlic is fragrant.

3. Seasoning:

  • Stir in the dried oregano, dried basil, salt, black pepper, and red pepper flakes (if using). Mix well to evenly distribute the flavors.

4. Sauce Mixture:

  • Pour in the tomato sauce and diced tomatoes with their juice. Stir to combine everything in the skillet.

5. Broth and Pasta:

  • Add the beef broth to the skillet and bring the mixture to a simmer. Once simmering, stir in the uncooked elbow macaroni. Cook for about 10-12 minutes, stirring occasionally, until the pasta is tender and has absorbed most of the liquid.

6. Cheese, Please:

  • Reduce the heat to low, and add the shredded mozzarella cheese. Stir until the cheese is melted and well combined.

7. Parmesan Finish:

  • Sprinkle the grated Parmesan cheese over the top of the mixture. Cover the skillet and let it sit for a couple of minutes until the Parmesan is melted.

8. Garnish and Serve:

  • Remove from heat and let it rest for a few minutes. Garnish with freshly chopped parsley for a burst of freshness.
