Crockpot Pepper Steak

Ingredients:
- 2 pounds of beef sirloin, thinly sliced
- 1 cup beef broth
- 1/4 cup soy sauce
- 1/4 cup oyster sauce
- 2 tablespoons cornstarch
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1 tablespoon vegetable oil
- 1 large onion, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 tablespoons tomato paste
- 1/2 teaspoon black pepper
- 1/2 teaspoon crushed red pepper flakes (optional)
- 2 tablespoons chopped green onions (for garnish)
- Cooked white rice (for serving)
Instructions:
- Prepare the Beef:
- Trim excess fat from the beef sirloin and thinly slice it against the grain.
- In a bowl, combine soy sauce, oyster sauce, sugar, and sesame oil. Add the beef slices and toss to coat evenly. Let it marinate for at least 15 minutes.
- Dissolve Cornstarch:
- In a small bowl, dissolve cornstarch in beef broth. Ensure there are no lumps.
- Sear the Beef:
- Heat vegetable oil in a skillet over medium-high heat. Sear the marinated beef slices until browned on both sides. Transfer the seared beef to the crockpot.
- Saute Vegetables:
- In the same skillet, add a bit more oil if needed. Saute onions, red bell pepper, green bell pepper, garlic, and ginger until softened. Add tomato paste and continue to saute for 2 minutes.
- Combine Ingredients in Crockpot:
- Transfer the sauteed vegetables to the crockpot with the seared beef. Pour the beef broth and cornstarch mixture over the beef and vegetables. Add black pepper and crushed red pepper flakes if using. Stir to combine.
- Cook in Crockpot:
- Cover the crockpot and cook on low heat for 6-8 hours or until the beef is tender. Alternatively, cook on high for 3-4 hours.
- Serve:
- Once cooked, taste and adjust seasoning if necessary. Serve the Crockpot Pepper Steak over cooked white rice.
- Garnish:
- Garnish with chopped green onions before serving.
