Ingredients:
- 1 pound fresh green beans, washed and trimmed
- 1 pound baby potatoes, halved
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 lemon, juiced
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions:
1. Prepare the Ingredients:
- Wash and trim the fresh green beans.
- Halve the baby potatoes.
2. Blanch the Vegetables:
- Bring a large pot of salted water to a boil.
- Add the green beans and baby potatoes to the boiling water.
- Blanch for 3-4 minutes, or until the vegetables are slightly tender but still crisp.
- Drain the vegetables and immediately transfer them to a bowl of ice water to stop the cooking process.
- Once cooled, drain the vegetables again and set aside.
3. Sauté Garlic and Thyme:
- In a large skillet, heat the olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Stir in dried thyme and cook for an additional minute.
4. Cook Potatoes and Green Beans:
- Add the blanched green beans and potatoes to the skillet.
- Season with salt and pepper to taste.
- Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender and slightly golden.
5. Finish with Lemon Juice:
- Squeeze fresh lemon juice over the vegetables, tossing to coat evenly.
- Adjust seasoning if necessary.
6. Garnish and Serve:
- Transfer the green beans and potatoes to a serving dish.
- Garnish with chopped fresh parsley.
- Serve immediately as a delicious side dish.
Optional Tips:
- For an extra kick, add a pinch of red pepper flakes during the sautéing step.
- Experiment with different herbs like rosemary or dill for added flavor.
- Drizzle a bit of balsamic glaze over the finished dish for a sweet and tangy twist.
