Ingredients:

  • 1 pound (450g) boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional for some heat)
  • Salt and black pepper, to taste
  • 1 can (14 ounces/400g) crushed tomatoes
  • 1/2 cup (120ml) chicken broth
  • 1/4 cup (60ml) red wine (optional)
  • 8 ounces (225g) your favorite pasta (spaghetti, fettuccine, or penne)
  • 1/2 cup (50g) grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions:

  1. Prepare the Chicken:
    • Season the sliced chicken breasts with salt, black pepper, dried oregano, and dried basil.
    • In a large skillet, heat olive oil over medium-high heat.
    • Add the seasoned chicken slices to the skillet and cook until browned on both sides, about 3-4 minutes per side.
    • Remove the chicken from the skillet and set aside.
  2. Prepare the Sauce:
    • In the same skillet, add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant.
    • Pour in the crushed tomatoes, chicken broth, and red wine (if using). Stir to combine.
    • Bring the sauce to a simmer and let it cook for 10-15 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
  3. Cook the Pasta:
    • While the sauce is simmering, cook the pasta according to the package instructions until al dente. Drain and set aside.
  4. Combine and Finish:
    • Once the sauce has simmered and thickened, add the cooked chicken back to the skillet. Stir to coat the chicken in the sauce and let it simmer for an additional 5 minutes to ensure the chicken is fully cooked.
  5. Serve:
    • Place a serving of pasta on each plate, top with the Italian chicken and sauce.
    • Sprinkle grated Parmesan cheese over the top and garnish with fresh basil leaves.
    • Serve immediately and enjoy your delicious Italian Chicken Pasta!
