Italian Chicken Pasta

Ingredients:
- 1 pound (450g) boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional for some heat)
- Salt and black pepper, to taste
- 1 can (14 ounces/400g) crushed tomatoes
- 1/2 cup (120ml) chicken broth
- 1/4 cup (60ml) red wine (optional)
- 8 ounces (225g) your favorite pasta (spaghetti, fettuccine, or penne)
- 1/2 cup (50g) grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions:
- Prepare the Chicken:
- Season the sliced chicken breasts with salt, black pepper, dried oregano, and dried basil.
- In a large skillet, heat olive oil over medium-high heat.
- Add the seasoned chicken slices to the skillet and cook until browned on both sides, about 3-4 minutes per side.
- Remove the chicken from the skillet and set aside.
- Prepare the Sauce:
- In the same skillet, add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant.
- Pour in the crushed tomatoes, chicken broth, and red wine (if using). Stir to combine.
- Bring the sauce to a simmer and let it cook for 10-15 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
- Cook the Pasta:
- While the sauce is simmering, cook the pasta according to the package instructions until al dente. Drain and set aside.
- Combine and Finish:
- Once the sauce has simmered and thickened, add the cooked chicken back to the skillet. Stir to coat the chicken in the sauce and let it simmer for an additional 5 minutes to ensure the chicken is fully cooked.
- Serve:
- Place a serving of pasta on each plate, top with the Italian chicken and sauce.
- Sprinkle grated Parmesan cheese over the top and garnish with fresh basil leaves.
- Serve immediately and enjoy your delicious Italian Chicken Pasta!
