Hibachi Chicken and Vegetable Stir Fry
Ingredients:
1 pound boneless, skinless chicken breasts, thinly sliced
2 cups broccoli florets
1 cup sliced carrots
1 cup sliced zucchini
1 cup sliced mushrooms
1 onion, thinly sliced
3 tablespoons soy sauce
2 tablespoons teriyaki sauce
2 tablespoons sesame oil
1 tablespoon vegetable oil
2 cloves garlic, minced
1 teaspoon ginger, grated
Salt and pepper to taste
Cooked white rice for serving
Instructions:
Prepare the Sauce:
In a small bowl, mix together soy sauce, teriyaki sauce, sesame oil, minced garlic, and grated ginger. Set aside.
Prepare the Vegetables:
Heat vegetable oil in a large hibachi-style griddle or skillet over medium-high heat.
Add sliced onions, broccoli, carrots, zucchini, and mushrooms.
Stir-fry the vegetables until they are tender-crisp. Season with salt and pepper to taste.
Cook the Chicken:
Push the cooked vegetables to the side of the griddle, creating a free space for the chicken.
Add the thinly sliced chicken to the empty space and cook until browned and cooked through.
Combine and Finish:
Once the chicken is cooked, combine it with the stir-fried vegetables on the griddle.
Pour the prepared sauce over the chicken and vegetables, tossing everything together until well coated and heated through.
Serve:
Serve the hibachi chicken and vegetables over a bed of cooked white rice.
