Apple Butter

Ingredients:
- 5 lbs (about 12 cups) of apples, peeled, cored, and sliced (use a mix of sweet and tart varieties)
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions:
- Prepare the Apples:
- Wash, peel, core, and slice the apples. Ensure that they are cut into uniform pieces to promote even cooking.
- Cooking the Apples:
- Place the sliced apples in a large, heavy-bottomed pot or Dutch oven.
- Cook the apples over medium heat, stirring occasionally, until they start to soften and release their juices. This usually takes about 15 minutes.
- Add Sweeteners and Spices:
- Stir in both types of sugar, ground cinnamon, ground nutmeg, ground cloves, and salt.
- Continue to cook the mixture over medium heat, stirring frequently, until the sugar dissolves and the spices are well distributed.
- Simmering the Mixture:
- Reduce the heat to low and let the mixture simmer uncovered. Stir occasionally to prevent sticking.
- Simmer for 1-2 hours, or until the apples have broken down and the mixture has thickened. The apples should have a deep, rich color.
- Blending and Smoothing:
- Remove the pot from the heat and let the mixture cool slightly.
- Use an immersion blender to puree the apple mixture until smooth. If you don’t have an immersion blender, carefully transfer the mixture to a blender in batches.
- Finishing Touches:
- Return the pot to low heat and stir in the lemon juice and vanilla extract.
- Continue to simmer for an additional 15-20 minutes to allow the flavors to meld.
- Testing for Consistency:
- Check the consistency of the apple butter by placing a small amount on a chilled plate. If it wrinkles and holds its shape, it’s ready.
- Cooling and Storing:
- Allow the apple butter to cool completely before transferring it to sterilized jars.
- Seal the jars tightly and store them in the refrigerator. The apple butter will continue to thicken as it cools.
- Enjoy:
- Spread your homemade apple butter on toast, muffins, or use it as a topping for pancakes and waffles. It also makes a delightful addition to yogurt or as a flavorful filling for pastries.
- Note:
- This apple butter can be stored in the refrigerator for up to 3 weeks. For longer storage, consider canning the apple butter using proper canning procedures.
