Enchilada Meatballs Recipe

Ingredients:
For Meatballs:
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup chopped cilantro
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
For Enchilada Sauce:
- 2 cups tomato sauce
- 1/4 cup tomato paste
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
For Assembly:
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- Sour cream and additional cilantro for garnish
Instructions:
1. Preheat the oven:
- Preheat your oven to 375°F (190°C).
2. Make the Meatballs:
- In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, cilantro, ground cumin, chili powder, garlic powder, salt, and pepper.
- Mix until well combined.
- Shape the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
3. Bake the Meatballs:
- Bake the meatballs in the preheated oven for 20-25 minutes or until they are cooked through and browned on the outside.
4. Prepare the Enchilada Sauce:
- In a saucepan, combine tomato sauce, tomato paste, minced garlic, ground cumin, chili powder, dried oregano, salt, and pepper.
- Simmer over medium heat for 10-15 minutes, stirring occasionally, until the sauce thickens.
5. Coat the Meatballs:
- Once the meatballs are done, transfer them to a large bowl.
- Pour the enchilada sauce over the meatballs and gently toss until all the meatballs are coated with the sauce.
6. Assemble and Bake:
- Transfer the sauced meatballs to a baking dish.
- Sprinkle shredded cheddar cheese over the top.
- Bake in the oven for an additional 10-15 minutes or until the cheese is melted and bubbly.
7. Garnish and Serve:
- Remove the enchilada meatballs from the oven.
- Garnish with chopped green onions and additional cilantro.
- Serve warm with a dollop of sour cream on the side.
