Ingredients:

For Meatballs:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For Enchilada Sauce:

  • 2 cups tomato sauce
  • 1/4 cup tomato paste
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

For Assembly:

  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • Sour cream and additional cilantro for garnish

Instructions:

1. Preheat the oven:

  • Preheat your oven to 375°F (190°C).

2. Make the Meatballs:

  • In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, cilantro, ground cumin, chili powder, garlic powder, salt, and pepper.
  • Mix until well combined.
  • Shape the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.

3. Bake the Meatballs:

  • Bake the meatballs in the preheated oven for 20-25 minutes or until they are cooked through and browned on the outside.

4. Prepare the Enchilada Sauce:

  • In a saucepan, combine tomato sauce, tomato paste, minced garlic, ground cumin, chili powder, dried oregano, salt, and pepper.
  • Simmer over medium heat for 10-15 minutes, stirring occasionally, until the sauce thickens.

5. Coat the Meatballs:

  • Once the meatballs are done, transfer them to a large bowl.
  • Pour the enchilada sauce over the meatballs and gently toss until all the meatballs are coated with the sauce.

6. Assemble and Bake:

  • Transfer the sauced meatballs to a baking dish.
  • Sprinkle shredded cheddar cheese over the top.
  • Bake in the oven for an additional 10-15 minutes or until the cheese is melted and bubbly.

7. Garnish and Serve:

  • Remove the enchilada meatballs from the oven.
  • Garnish with chopped green onions and additional cilantro.
  • Serve warm with a dollop of sour cream on the side.
