Chili Oil Noodles with Steak, Fried Egg, and Bok Choy

Ingredients:
- 8 oz (about 225g) flat Chinese wheat noodles
- 1 lb (450g) sirloin steak, thinly sliced
- 4 large eggs
- 2 heads of baby bok choy, halved
- 4 tablespoons soy sauce
- 3 tablespoons chili oil
- 2 tablespoons sesame oil
- 2 tablespoons oyster sauce
- 1 tablespoon rice vinegar
- 2 teaspoons sugar
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- Salt and pepper to taste
- Chopped green onions and sesame seeds for garnish
Instructions:
1. Prepare the Noodles:
- Cook the noodles according to package instructions until al dente.
- Drain and rinse under cold water to stop cooking.
- Toss with a bit of sesame oil to prevent sticking.
2. Cook the Steak:
- Season the thinly sliced steak with salt and pepper.
- Heat a skillet or wok over high heat.
- Add a tablespoon of vegetable oil and quickly sear the steak slices until browned on both sides.
- Remove the steak from the skillet and set aside.
3. Fry the Eggs:
- In the same skillet, add a bit more oil if needed.
- Crack the eggs into the skillet and fry to your liking (over easy or sunny-side-up).
- Season with salt and pepper.
4. Saute Bok Choy:
- In the same skillet, add a bit more oil if necessary.
- Add minced garlic and grated ginger, sauté until fragrant.
- Add the halved baby bok choy and cook until they are tender but still crisp.
- Season with soy sauce and toss to coat.
5. Prepare the Sauce:
- In a small bowl, whisk together soy sauce, chili oil, sesame oil, oyster sauce, rice vinegar, and sugar.
6. Combine and Toss:
- Add the cooked noodles to the skillet with the bok choy.
- Pour the sauce over the noodles and toss until everything is well coated.
7. Assemble:
- Divide the noodles and bok choy among serving plates.
- Top with the seared steak slices and a fried egg on each serving.
8. Garnish:
- Sprinkle chopped green onions and sesame seeds over the top.
9. Serve:
- Serve immediately, allowing everyone to mix the ingredients together for maximum flavor.
