Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Vegetables: In a large mixing bowl, combine the mixed vegetables, diced potatoes, sliced mushrooms, diced onions, and minced garlic. Toss to mix evenly.
- Cook Chicken: In a large skillet over medium heat, cook the cubed chicken until browned and cooked through. Season with salt and pepper to taste. Once cooked, add the chicken to the bowl of mixed vegetables.
- Make Roux: In the same skillet, melt the butter over medium heat. Add the flour and whisk continuously until a smooth paste (roux) forms. Cook for 2-3 minutes to eliminate the raw flour taste.
- Create Sauce: Gradually whisk in the chicken broth and milk until the mixture is smooth and thickened. Add dried thyme, dried rosemary, and salt and pepper to taste. Simmer for 5 minutes until the flavors meld.
- Combine Sauce and Chicken Mixture: Pour the creamy sauce over the chicken and vegetable mixture. Mix until everything is well-coated.
- Assemble Casserole: Transfer the mixture into a greased casserole dish. Sprinkle shredded cheddar cheese evenly over the top, followed by a layer of breadcrumbs.
- Bake: Place the casserole dish in the preheated oven and bake for 30-35 minutes or until the top is golden brown, and the casserole is bubbling around the edges.
- Serve: Remove the casserole from the oven and let it cool for a few minutes before serving. Scoop out generous portions onto plates and enjoy the ultimate comfort of this Chicken Casserole!
