Instructions:

1. Prepare the Filling: a. In a large skillet over medium heat, cook the ground beef or shredded chicken until browned. b. Add the chopped onion, minced garlic, and diced bell pepper. Cook until the vegetables are softened. c. Stir in the black beans, corn, ground cumin, chili powder, smoked paprika, salt, and pepper. Cook for an additional 5 minutes. d. Add the cooked rice to the mixture and stir until well combined. Remove from heat.

2. Make the Wet Burrito Sauce: a. In a saucepan, combine the enchilada sauce, tomato sauce, ground cumin, chili powder, and salt. b. Simmer the sauce over medium heat for 10-15 minutes, stirring occasionally. Adjust seasoning to taste.

3. Assemble the Wet Burritos: a. Preheat your oven to 375°F (190°C). b. Take a large flour tortilla and spoon a generous portion of the burrito filling onto the center. c. Sprinkle a handful of shredded Mexican cheese over the filling. d. Roll the tortilla tightly, folding in the sides, to form a burrito. Place it seam-side down in a baking dish. e. Repeat the process for the remaining tortillas.

4. Pour the Sauce and Bake: a. Pour the prepared wet burrito sauce evenly over the assembled burritos in the baking dish. b. Sprinkle additional cheese on top of the sauce. c. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.

5. Serve: a. Remove the wet burritos from the oven and let them cool for a few minutes. b. Garnish with chopped cilantro and sliced green onions. c. Serve with a dollop of sour cream and a side of guacamole.
