Slow Cooker Ham and Potato Soup

Instructions:

  1. In a slow cooker, combine diced ham, chicken broth, water, potatoes, carrots, celery, onion, garlic, thyme, rosemary, bay leaf, salt, and pepper.
  2. Cover the slow cooker and cook on low heat for 6-8 hours or until the vegetables are tender.
  3. About 30 minutes before serving, in a medium saucepan, whisk together milk, heavy cream, and flour until smooth. Heat over medium heat, stirring constantly, until the mixture thickens.
  4. Stir the milk and flour mixture into the slow cooker, ensuring it is well combined with the soup.
  5. Continue to cook on low heat for an additional 30 minutes to allow the soup to thicken.
  6. Before serving, taste and adjust seasoning as needed. Remove the bay leaf.
  7. Ladle the hot soup into bowls, garnish with fresh chopped parsley, and serve.
