Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Add the pasta and cook according to package instructions until al dente.
    • Drain the pasta and rinse under cold water to stop the cooking process. Set aside.
  2. Prepare the Vegetables:
    • In a large mixing bowl, combine the cherry tomatoes, cucumber, red and yellow bell peppers, red onion, black olives, and feta cheese.
  3. Make the Dressing:
    • In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper until well combined.
  4. Combine Everything:
    • Add the cooled pasta to the bowl of vegetables and cheese.
    • Pour the dressing over the pasta and vegetables.
    • Toss everything gently to coat the pasta and vegetables evenly with the dressing.
  5. Chill and Serve:
    • Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
    • Before serving, toss the salad again to ensure the dressing is well distributed.
    • Sprinkle fresh basil over the top for a burst of flavor.
  6. Serve:
    • Serve the pasta salad chilled as a refreshing side dish for picnics, barbecues, or as a light lunch.
    • Optionally, garnish with additional feta cheese and basil before serving.
