Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a baking dish (9×13 inches) with butter or cooking spray.
  2. Prepare Potatoes: Peel the potatoes and thinly slice them into rounds, about 1/8-inch thick. Rinse the slices in cold water to remove excess starch and pat them dry with a paper towel.

  6. Bake: Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top. Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes. Then, remove the foil and bake for an additional 20-25 minutes or until the potatoes are tender and the top is golden brown.
  7. Serve: Allow the cheesy scalloped potatoes to rest for 10 minutes before serving. Garnish with fresh chopped parsley for a burst of color and freshness.
