Ingredients:
- 3 to 4 pounds of beef roast (such as chuck or sirloin)
- 2 tablespoons vegetable oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 cup beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper, to taste
- 4 to 5 potatoes, peeled and cut into chunks
