Instructions:

Preparation:

  1. Preheat your oven to 325°F (163°C).

1. Sear the Beef:

  • Pat the beef roast dry with paper towels.
  • Season it generously with salt and black pepper.
  • In a large oven-safe pot or Dutch oven, heat vegetable oil over medium-high heat.
  • Sear the beef on all sides until it develops a brown crust. Remove from the pot and set aside.

2. Sauté Vegetables:

  • In the same pot, add diced onions, minced garlic, carrots, and celery.
  • Sauté until the vegetables are softened, about 5 minutes.

3. Deglaze the Pot:

  • Pour in the beef broth and red wine (if using), scraping the bottom of the pot to release any flavorful bits.
  • Stir in tomato paste, dried thyme, and dried rosemary.

4. Add the Beef Back:

  • Return the seared beef to the pot, nestling it among the vegetables.

5. Roasting:

  • Cover the pot with a lid and transfer it to the preheated oven.
  • Roast for about 2.5 to 3 hours or until the beef is fork-tender.

6. Potatoes:

  • In the last hour of cooking, add the peeled and cut potatoes to the pot, ensuring they are submerged in the liquid.

7. Final Touch:

  • Once the beef and potatoes are cooked, remove the pot from the oven.
  • Taste the broth and adjust the seasoning if necessary.

8. Serve:

  • Slice the beef into thick slices and serve it with the vegetables and potatoes.
  • Spoon the flavorful broth over the beef slices and enjoy your hearty beef roast pot!

This classic beef roast pot is a comforting and savory dish, perfect for family gatherings or a special Sunday dinner. The slow roasting allows the flavors to meld, creating a mouthwatering meal that will have everyone coming back for seconds.
