Instructions:

1. Prepare the Pizza Dough:

  • In a small bowl, combine yeast, sugar, and warm water. Let it sit for 5 minutes until it becomes frothy.
  • In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  • Mix until a dough forms. Knead on a floured surface for about 5 minutes until smooth.
  • Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until it doubles in size.

2. Prepare the Oxtail:

  • Season oxtail pieces with salt and pepper.
  • In a large, oven-safe pot, heat olive oil over medium-high heat. Brown oxtail on all sides.
  • Add onions, bell peppers, and garlic. Cook until vegetables are softened.
  • Pour in beef broth, red wine, thyme, rosemary, and add the bay leaf. Bring to a simmer.
  • Cover the pot and transfer it to a preheated oven at 325°F (163°C). Bake for 3-4 hours or until oxtail is tender and falls off the bone.
  • Shred the oxtail meat and discard bones.

3. Assemble the Pizza:

  • Preheat your oven to 475°F (245°C).
  • Roll out the pizza dough on a floured surface to your desired thickness.
  • Transfer the dough to a pizza stone or baking sheet.
  • Spread the shredded oxtail evenly over the dough.
  • Sprinkle with provolone and mozzarella cheeses, then distribute sautéed mushrooms on top.
  • Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly.
  • Remove from the oven and sprinkle grated Parmesan cheese and chopped parsley over the pizza.

4. Serve and Enjoy:

  • Slice the Oxtail Cheesesteak Pizza and serve hot.
