Instructions:
1. Prepare the Pizza Dough:
- In a small bowl, combine yeast, sugar, and warm water. Let it sit for 5 minutes until it becomes frothy.
- In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
- Mix until a dough forms. Knead on a floured surface for about 5 minutes until smooth.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until it doubles in size.
2. Prepare the Oxtail:
- Season oxtail pieces with salt and pepper.
- In a large, oven-safe pot, heat olive oil over medium-high heat. Brown oxtail on all sides.
- Add onions, bell peppers, and garlic. Cook until vegetables are softened.
- Pour in beef broth, red wine, thyme, rosemary, and add the bay leaf. Bring to a simmer.
- Cover the pot and transfer it to a preheated oven at 325°F (163°C). Bake for 3-4 hours or until oxtail is tender and falls off the bone.
- Shred the oxtail meat and discard bones.
3. Assemble the Pizza:
- Preheat your oven to 475°F (245°C).
- Roll out the pizza dough on a floured surface to your desired thickness.
- Transfer the dough to a pizza stone or baking sheet.
- Spread the shredded oxtail evenly over the dough.
- Sprinkle with provolone and mozzarella cheeses, then distribute sautéed mushrooms on top.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly.
- Remove from the oven and sprinkle grated Parmesan cheese and chopped parsley over the pizza.
4. Serve and Enjoy:
