Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Season the Pork Chops: Pat the pork chops dry with paper towels. Season both sides generously with salt and black pepper.
- Dredge in Flour: Dredge each pork chop in the all-purpose flour, shaking off any excess.
- Brown the Pork Chops: In a large skillet over medium-high heat, heat the vegetable oil. Add the pork chops and brown them on both sides, about 3-4 minutes per side. Once browned, transfer the pork chops to a plate and set aside.
- Saute the Vegetables: In the same skillet, add the sliced onions and bell peppers. Cook until softened, about 3-4 minutes. Add the minced garlic and sauté for an additional 1 minute.
- Create the Smothering Sauce: Pour in the chicken broth and diced tomatoes with their juices. Stir in the thyme, oregano, paprika, and cayenne pepper (if using). Allow the mixture to come to a simmer, scraping up any browned bits from the bottom of the skillet.
- Return Pork Chops to Skillet: Return the browned pork chops to the skillet, nestling them into the vegetable mixture.
- Bake in the Oven: Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Bake for 25-30 minutes or until the pork chops are cooked through and tender.
- Garnish and Serve: Remove the skillet from the oven. Garnish with chopped fresh parsley. Serve the juicy smothered pork chops over rice, mashed potatoes, or your preferred side dish.
- Enjoy! Serve hot and savor the flavorful and juicy smothered pork chops with the rich and savory sauce.
Note: Adjust the level of cayenne pepper according to your spice preference.
