INSTRUCTIONS: For the Crust:
- Line the bottom and sides of a 9×13-inch baking pan with foil, leaving a 1 to 2-inch overhang on each side for easy removal. Lightly spray the foil with non-stick cooking spray.
- In a small mixing bowl, combine the flour and sugar. Cut the butter into chunks and add it to the flour mixture. Cut in the butter until the mixture resembles coarse crumbs.
- Press the mixture evenly into the bottom of the prepared baking pan, building up about a 1/2-inch lip around the edges to contain the filling.
- Bake at 350°F for 20 minutes.
For the Filling:
- In a mixing bowl, beat together the eggs, sugar, flour, and lemon juice with an electric mixer until well blended.
- With the mixer on low speed, add the finely chopped lemon zest and beat until just blended.
- Spread the lemon mixture over the partially-baked crust.
- Bake for an additional 25-30 minutes or until set, and the edges are lightly golden brown. Cool completely in the pan.
Final Steps:
- Once cooled, use the foil overhang to lift the bars from the pan. Place on a cutting board and peel the foil away from the edges.
- Dust the top with a coating of confectioners’ sugar.
