Instructions:

  1. Prep the Beef:
    • In a large skillet or Dutch oven, heat vegetable oil over medium-high heat.
    • Sear the sliced beef until browned on all sides.
    • Add chopped onion and minced garlic, cooking until softened.
  2. Season and Simmer:
    • Stir in cumin powder, smoked paprika, dried oregano, bay leaves, salt, and black pepper.
    • Pour in beef broth and bring to a simmer.
    • Reduce heat, cover, and let it simmer for 2-3 hours until the beef is tender and easily shreds.
  3. Shred the Beef:
    • Once the beef is cooked, remove it from the broth and shred it using two forks.
  4. Prepare Consommé:
    • Strain the broth into a separate pot, discarding solids.
    • Season the consommé with ground cumin, dried oregano, and salt to taste. Keep warm.
  5. Assemble Quesabirria Tacos:
    • Heat a skillet over medium heat.
    • Warm corn tortillas on both sides until pliable.
    • On one side of the tortilla, add a handful of shredded beef and sprinkle with cheese.
    • Fold the tortilla in half, creating a taco, and press gently to seal.
  6. Crisp the Tacos:
    • In the skillet, add a bit of oil and place the folded tacos.
    • Cook until the tortillas are golden and crispy on both sides.
  7. Serve:
    • Arrange the Quesabirria Tacos on a plate.
    • Garnish with chopped cilantro and serve with lime wedges on the side.
  8. Dip and Enjoy:
    • Serve the warm consommé in small bowls for dipping the tacos.
