Instructions:
- Prep the Beef:
- In a large skillet or Dutch oven, heat vegetable oil over medium-high heat.
- Sear the sliced beef until browned on all sides.
- Add chopped onion and minced garlic, cooking until softened.
- Season and Simmer:

- On one side of the tortilla, add a handful of shredded beef and sprinkle with cheese.
- Fold the tortilla in half, creating a taco, and press gently to seal.
- Crisp the Tacos:
- In the skillet, add a bit of oil and place the folded tacos.
- Cook until the tortillas are golden and crispy on both sides.
- Serve:
- Arrange the Quesabirria Tacos on a plate.
- Garnish with chopped cilantro and serve with lime wedges on the side.
- Dip and Enjoy:
- Serve the warm consommé in small bowls for dipping the tacos.
