Instructions:

  1. Cook Sausage: In a large skillet over medium heat, cook the ground sausage, breaking it into crumbles with a spoon, until browned and cooked through. Remove excess grease if necessary.
  2. Sauté Aromatics: Add the chopped onion and minced garlic to the skillet with the cooked sausage. Sauté until the onions are translucent and fragrant.
  3. Prepare Rotel Mixture: Stir in the can of Rotel diced tomatoes and green chilies (undrained) into the sausage and onion mixture. Allow it to simmer for 2-3 minutes, letting the flavors meld.
  4. Blend Creamy Base: In a separate mixing bowl, combine the softened cream cheese, shredded cheddar cheese, mayonnaise, Worcestershire sauce, chili powder, cumin, salt, and pepper. Mix until well combined and smooth.
  5. Combine Mixtures: Add the creamy cheese mixture to the skillet with the sausage and Rotel mixture. Stir well, ensuring all ingredients are evenly incorporated.
  6. Heat and Melt: Continue to cook over low heat, stirring frequently, until the cheese is fully melted and the dip is heated through. Be careful not to let it boil.
  7. Adjust Seasoning: Taste the dip and adjust the seasoning with salt and pepper as needed. You can also add more chili powder or cumin for extra flavor.
  8. Serve: Transfer the Sausage Rotel Dip to a serving dish. Garnish with chopped green onions and fresh cilantro if desired.
