ITALIAN DRUNKEN NOODLES

Preparation:

  1. Heat ½ tablespoon of oil in a 4-quart Dutch oven or large pan and cook the Italian sausage. Take out of the pan and place aside.
  2. Heat the remaining ½ tablespoon of olive oil in the same saucepan and sauté the onion, bell peppers, and garlic for approximately 3 minutes, or until aromatic.
  3. After adding the white wine, reduce it until nearly all of it evaporates.
  4. Simmer for ten minutes after adding the diced tomatoes, Italian seasoning, red chili flakes, salt, and pepper. After adding the chopped parsley back to the saucepan, add the sausage again. While the noodles are cooking, prepare them as directed on the box. Cook for a further five minutes and keep warm. After draining, add the noodles to the saucepan. After tossing to mix, serve.
