This dish has my husband hooked—he pleads for it on a weekly basis.
Preparation
Preheat the oven to 375°F (190°C). Lightly cover the baking dish of your choice with oil or nonstick spray.
Using a meat pounder, carefully flatten the chicken breasts to about 1-inch thickness to achieve an even cook and soft bite. Whisk together the sour cream (if using) and Caesar dressing in a bowl.
Season each chicken breast with care. Place a quarter cup of freshly grated Parmesan cheese on top of each piece and gently press it into the baking dish.
Dredge the chicken generously in the sauce. For a golden crust, sprinkle the remaining Parmesan cheese on top.
Place it in the oven and bake it for around twenty to thirty minutes. The chicken is done when it’s golden brown and cooked through.
Serving Tip:
To add some flavor and color, sprinkle it some freshly chopped parsley. Try serving this dish with a crisp arugula salad or oven-roasted vegetables to make it more impressive.
