Mini Quiche
Instructions:
Step 1: Prepare the Quiche Crust
In a food processor, combine the all-purpose flour and salt. Add the cold, cubed, unsalted butter and pulse until the mixture resembles coarse crumbs. Gradually add the ice water, one tablespoon at a time, and pulse until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.
Step 2: Roll and shape the crust.
Preheat your oven to 375°F (190°C). Roll out the chilled quiche dough on a floured surface and cut out circles that will fit into your mini quiche pans or muffin tins. Press the dough circles into the pans, forming mini crusts. Prick the bottoms with a fork.
Step 3: Prepare the Quiche Filling
In a mixing bowl, whisk together the eggs and heavy cream, or half-and-half. Season the mixture with salt and pepper to taste. Depending on your chosen fillings, sauté any vegetables or meats beforehand.
Step 4: Assemble and bake
Divide your chosen fillings among the mini-crusts. Pour the egg and cream mixture over the fillings, filling each crust nearly to the top. Be sure not to overfill.
Step 5: Bake the Mini Quiche
Bake the mini quiches in the preheated oven for about 20–25 minutes, or until the quiche filling is set and the crust is golden brown.
Step 6: Cool and Serve
Before taking the small quiches from the pans with caution, let them cool somewhat. Serve them warm or at room temperature after arranging them on a serving plate.
