Instructions
For the Philly Cheesesteak Filling:
- Prepare the beef:
- Season the thinly sliced beef with salt, freshly ground black pepper, dried oregano, and paprika. Toss to evenly coat.
- Sauté onions and peppers:
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced onions and bell peppers. Sauté for about 3–4 minutes, or until they start to soften and turn slightly translucent. Remove them from the skillet and set them aside.
- Sear the Beef:
- In the same skillet, add the remaining tablespoon of olive oil. Once hot, add the seasoned beef slices. Cook for 2-3 minutes, stirring occasionally, until the beef is browned and cooked to your preferred level of doneness.
- Combine Ingredients:
- Return the sautéed onions and peppers to the skillet with the beef. Add the minced garlic and beef broth. Cook for an additional 2–3 minutes, allowing the flavors to meld and the broth to reduce. Remove the skillet from the heat.
For the Quesadillas:
- Assemble the quesadillas:
- Lay out the flour tortillas on a clean surface.
- Sprinkle a generous amount of shredded cheese on one half of each tortilla.
- Spoon the Philly cheesesteak filling evenly over the cheese.
- Fold the other half of the tortilla over the filling, creating a half-moon shape.
- Cook the quesadillas:
- Heat a clean skillet or griddle over medium heat. Add a small amount of butter to coat the surface.
- Carefully transfer a quesadilla to the hot skillet. Cook for about 2–3 minutes on each side, or until the tortilla is golden brown and the cheese is melted and gooey.
- Repeat this process for the remaining quesadillas.
- Serve and enjoy:
- Slice each quesadilla into wedges and serve hot.
Tips
- Customize your quesadillas with your favorite cheese blend. Provolone and mozzarella work well, but feel free to get creative.
- Add a little heat with sliced jalapeños or a drizzle of hot sauce if you like your Philly cheesesteak with a kick.
- To make these quesadillas even more authentic, you can use thinly sliced ribeye steak or sirloin.
- Serve with a side of ketchup, mayo, or a creamy horseradish sauce for dipping.
