Homemade Pecan Sandies

PREPARATION
Preheat the oven to 350º F and line 1-2 baking sheets with parchment paper.
In a large bowl, beat together the sugar, egg, butter, and vanilla until creamy, 3-5 minutes.
In a separate bowl, combine the flour, salt, and baking soda.
With the mixer set to low, slowly add the dry ingredients until just combined, then fold the chopped pecans into the batter.
Scoop out the dough, roll into 1-inch sized balls, and place on a lined baking sheet. Optional: top each cookie with a pecan.
Place the baking sheet(s) in the oven and bake for 10–12 minutes, or until the edges of the cookie are just golden.
Remove from the oven and cool on a wire rack. Serve immediately or store in an airtight container. Enjoy!
