Instructions:
- Activate the Yeast: In a small bowl, combine warm water, instant yeast, and sugar. Stir gently and let it sit for about 5-10 minutes until frothy.
- Mix Dry Ingredients: In a large mixing bowl, sift together the all-purpose flour and salt.
- Combine Wet Ingredients: Add the activated yeast mixture and plain yogurt to the flour mixture. Stir until a dough forms.
- Knead the Dough: Transfer the dough to a floured surface and knead it for about 5-7 minutes until it becomes smooth and elastic. If the dough is too sticky, you can add a little more flour.
- First Rise: Place the dough in a lightly greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour, or until it doubles in size.
- Preheat the Oven: Preheat your oven to the highest temperature setting (usually around 500°F or 260°C). If you have a pizza stone, place it in the oven while preheating.
- Divide and Shape: Once the dough has doubled in size, punch it down and divide it into 6 equal portions. Roll each portion into a ball, then flatten and shape them into ovals or rounds, about 1/4 inch thick.
- Second Rise (Optional): If time permits, you can let the shaped naan dough rise for an additional 15-20 minutes.
- Bake the Naan: Carefully place the shaped naan dough onto the preheated pizza stone or a baking sheet lined with parchment paper. Bake for 5-7 minutes, or until the naan puffs up and the bottom is golden brown. You can also use a broiler for a few minutes to get a charred effect on the top.
- Brush with Butter: Once baked, remove the naan from the oven and immediately brush the tops with melted butter or ghee. Sprinkle with minced garlic, chopped cilantro, or nigella seeds if desired.
- Serve Warm: Serve the naan bread warm with your favorite curry, dip, or as a side to any meal.
