Instructions:

  1. Activate the Yeast: In a small bowl, combine warm water, instant yeast, and sugar. Stir gently and let it sit for about 5-10 minutes until frothy.
  2. Mix Dry Ingredients: In a large mixing bowl, sift together the all-purpose flour and salt.
  3. Combine Wet Ingredients: Add the activated yeast mixture and plain yogurt to the flour mixture. Stir until a dough forms.
  4. Knead the Dough: Transfer the dough to a floured surface and knead it for about 5-7 minutes until it becomes smooth and elastic. If the dough is too sticky, you can add a little more flour.
  5. First Rise: Place the dough in a lightly greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour, or until it doubles in size.
  6. Preheat the Oven: Preheat your oven to the highest temperature setting (usually around 500°F or 260°C). If you have a pizza stone, place it in the oven while preheating.
  7. Divide and Shape: Once the dough has doubled in size, punch it down and divide it into 6 equal portions. Roll each portion into a ball, then flatten and shape them into ovals or rounds, about 1/4 inch thick.
  8. Second Rise (Optional): If time permits, you can let the shaped naan dough rise for an additional 15-20 minutes.
  9. Bake the Naan: Carefully place the shaped naan dough onto the preheated pizza stone or a baking sheet lined with parchment paper. Bake for 5-7 minutes, or until the naan puffs up and the bottom is golden brown. You can also use a broiler for a few minutes to get a charred effect on the top.
  10. Brush with Butter: Once baked, remove the naan from the oven and immediately brush the tops with melted butter or ghee. Sprinkle with minced garlic, chopped cilantro, or nigella seeds if desired.
  11. Serve Warm: Serve the naan bread warm with your favorite curry, dip, or as a side to any meal.

Enjoy your homemade naan bread!
