Instructions:

Step 1: Preheat the oven.
Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan with non-stick spray to ensure easy removal of the cheesecake.

Step 2: Prepare the Graham Cracker Crust
In a bowl, combine the graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix until the crumbs are evenly coated with butter. Press the mixture firmly into the bottom of the prepared springform pan, creating an even layer. Use the back of a spoon or a flat-bottomed glass to ensure a compact and smooth crust.

Step 3: Create the cheesecake filling.
In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the pure vanilla extract, sour cream, and lemon zest (if using) until the filling is smooth and well combined.

Step 4: Pour the filling
Pour the creamy cheesecake filling over the Graham cracker crust in the springform pan. Smooth the top with a spatula to create an even surface.

Step 5: Bake the cheesecake.
Place the springform pan on the middle rack of your preheated oven. Bake the cheesecake for approximately 55–60 minutes, or until the edges are set and the center is slightly jiggly.

Step 6: Cool and Chill
Once out of the oven, let the cheesecake cool in the pan for about 15 minutes. Then, run a knife around the edge of the pan to loosen the cheesecake from the sides. This prevents cracking as the cheesecake cools and contracts. Allow the cheesecake to cool completely before chilling it in the refrigerator for at least 4 hours, or preferably overnight.

Step 7: Prepare the Cherry Topping
In a saucepan, combine the pitted cherries, granulated sugar, cornstarch, water, and lemon juice. Cook over medium heat, stirring occasionally, until the mixture thickens and the cherries are soft and glossy.

Step 8: Top and Serve
Once the cheesecake has chilled and set, gently spread the cherry topping over the surface, ensuring even coverage. Slice the cherry cheesecake with a sharp knife, and serve each slice with a smile.

Cherry Cheesecake is an exquisite melody of creamy indulgence and fruity delight that will elevate any occasion or sweeten any moment. Its velvety smooth texture and the captivating blend of cream cheese and cherries create a dessert experience that is both elegant and comforting. So, don your apron, prepare your springform pan, and embark on a delightful journey of flavor and sweetness. Embrace the splendor of cherry cheesecake and let it become a cherished dessert that leaves your guests longing for an encore!
