Ingredients:

  • 4 turkey wings
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 celery stalks, finely chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 cup chicken broth
  • 1 (14.5-ounce) can diced tomatoes
  • 2 teaspoons paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper, to taste
  • 2 bay leaves
  • 2 tablespoons all-purpose flour
  • 2 tablespoons water
  • Chopped fresh parsley, for garnish

Instructions:

  1. Prepare the Turkey Wings:
    • Rinse the turkey wings under cold water and pat them dry with paper towels.
    • Season the turkey wings with salt, black pepper, and 1 teaspoon of paprika.
  2. Sear the Turkey Wings:
    • In a large, heavy-bottomed skillet or Dutch oven, heat the vegetable oil over medium-high heat.

    • Cover the skillet with a lid and reduce the heat to low. Allow the turkey wings to simmer in the sauce for about 1.5 to 2 hours, or until they are tender and cooked through. Stir occasionally.
  5. Thicken the Sauce:
    • In a small bowl, mix the all-purpose flour and water to create a smooth paste.
    • Stir this paste into the simmering sauce and allow it to thicken. Simmer for an additional 5-10 minutes.
  6. Serve:
    • Remove the bay leaves and discard them.
    • Serve the smothered turkey wings hot over a bed of cooked rice or with your favorite side dishes.
    • Garnish with chopped fresh parsley before serving.
