Ingredients:

  • 1 pound fresh green beans, washed and trimmed
  • 1 pound baby potatoes, halved
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 lemon, juiced
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions:

1. Prepare the Ingredients:

  • Wash and trim the fresh green beans.
  • Halve the baby potatoes.

2. Blanch the Vegetables:

  • Bring a large pot of salted water to a boil.
  • Add the green beans and baby potatoes to the boiling water.
  • Blanch for 3-4 minutes, or until the vegetables are slightly tender but still crisp.
  • Drain the vegetables and immediately transfer them to a bowl of ice water to stop the cooking process.
  • Once cooled, drain the vegetables again and set aside.

  • Stir in dried thyme and cook for an additional minute.

4. Cook Potatoes and Green Beans:

  • Add the blanched green beans and potatoes to the skillet.
  • Season with salt and pepper to taste.
  • Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender and slightly golden.

5. Finish with Lemon Juice:

  • Squeeze fresh lemon juice over the vegetables, tossing to coat evenly.
  • Adjust seasoning if necessary.

6. Garnish and Serve:

  • Transfer the green beans and potatoes to a serving dish.
  • Garnish with chopped fresh parsley.
  • Serve immediately as a delicious side dish.

Optional Tips:

  • For an extra kick, add a pinch of red pepper flakes during the sautéing step.
  • Experiment with different herbs like rosemary or dill for added flavor.
  • Drizzle a bit of balsamic glaze over the finished dish for a sweet and tangy twist.
