Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar, packed
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons olive oil
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper, freshly ground
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions:

1. Preheat the Oven

Preheat your oven to 375°F (190°C).

2. Prepare the Marinade

In a bowl, whisk together soy sauce, brown sugar, honey, minced garlic, grated ginger, olive oil, sesame oil, and black pepper until the sugar is completely dissolved.

3. Marinate the Chicken

Place the chicken thighs in a large zip-top bag or a shallow dish. Pour half of the marinade over the chicken, ensuring each piece is well coated. Reserve the remaining marinade for later use.

Seal the bag or cover the dish, and let the chicken marinate in the refrigerator for at least 30 minutes, or for better flavor, let it marinate for up to 4 hours.

4. Bake the Chicken

Place the marinated chicken thighs on a baking sheet lined with parchment paper or aluminum foil. Bake in the preheated oven for 35-40 minutes or until the internal temperature reaches 165°F (74°C), and the skin is golden and caramelized.

5. Baste with Reserved Marinade

During the last 15 minutes of baking, baste the chicken with the reserved marinade every 5 minutes to build up a flavorful caramelized glaze.

6. Garnish and Serve

Once the chicken is cooked through, remove it from the oven. Garnish with sliced green onions and sesame seeds if desired.
